Platano Maduros

Platanos Maduros

Sweet fried plantains, or plátanos maduros in Spanish, are a staple of Latin American cuisine, and are found in a few West African dishes as well. These chewy, slightly caramelized disks pair well with black bean soup, roast chicken, rice, or simply on their own.

Cuban Tostones

Tostones

Tostones are salted and eaten much like potato chips/crisps or French fries/chips. In some regions, it is customary to dip them in mojo (a garlic sauce). The dish is made from sliced green (unripe) plantains cut either length-wise or width-wise and are twice fried.
